Located in Woodinville, Washington's wine country, DeLille Cellars is a winery renowned for its Bordeaux-style blends. Founded in 1992 by Chris Upchurch, Jay A. Soloff, Charles Lill, and his son Greg, the winery focuses on the Red Mountain AVA and owns other prestigious vineyards in the Columbia Valley. Four Flags is a 100% Cabernet Sauvignon, with grapes sourced from four prestigious Red Mountain vineyards, including DeLille's own Grand Ciel vineyard, as well as Ciel du Cheval, Upchurch, and Klipsun. After harvest and fermentation in stainless steel, the finished wine spends 20 months in oak (93% new) and then an additional 10 months in bottle. In the glass, this powerful and elegant Cabernet reveals a fragrant aromatic profile with hints of cranberry, black plum, and maraschino cherry, followed by floral and eucalyptus notes and touches of graphite. On the palate, it is harmonious, dense, rich, and full-bodied with a strong tannic backbone and a good concentration of fruit. It is mineral, harmonious, and balanced with a long finish that blends fruit and aromatic herbs. It pairs perfectly with leg of lamb, a savory cheeseburger, or barbecued short ribs.
